Beef Stroganoff

This basic beef stroganoff recipe is truly an easy dinner recipe.
So elegant it’s great for company, but so quick to prepare it is a wonderful weeknight meal too.
Ingredients
1 lb (500 g) beef strip loin or Grilling Steak, cut into strips
1/2 cup (125 mL) white wine
1 tbsp (15mL) EACH of cornstarch and paprika
1 tbsp (15 mL) salt
¼ tsp (1 mL) pepper
1 onion, chopped
1 tbsp (15 mL) EACH of tomato paste and Dijon mustard
1/2 cup (125 ml) sour cream
1 pkg. dried porcini mushrooms
Egg noodles
Directions
1. Combine white wine, cornstarch, paprika, salt and pepper in a bowl to make a marinade. Add beef strips to marinade. Cover and refrigerate 30 minutes.
2. Meanwhile, combine 1 cup (250mL) boiling water with porcini mushrooms. Soak for 20 minutes; drain and reserving water. Chop mushrooms finely; set aside.
3. Stir-fry beef strips, reserving extra marinade, using medium-high heat in lightly oiled nonstick skillet for 2 minutes or until browned but still pink inside. Remove beef to a clean bowl.
4. In same nonstick pan, cook onion and mushrooms for 5 to 7 minutes over medium heat. Increase heat to medium-high and add beef strips, extra marinade and 1/4 cup (50 mL) reserved water, add tomato paste and mustard. Bring to a boil, stirring constantly until just thickened. Stir in sour cream and heat through. Serve over egg noodles.
